1953 Jean Fillioux Grande Champagne 1er Cru Cognac

The 57 year old Grande Champagne cognac, distilled from the 1953 harvest, a highly regarded vintage when the grapes produced particularly ripe, concentrated wines with exceptional balance and harmony. Bottled in September 2010 with an extremely limited outurn, 8/8 Cocktails was able to secure one of the last remaining bottles.

Whistle Pig Vermont Estate Oak 15 Year Old Straight Rye Whiskey

Ryes of this age are seldom found, and Whistle Pig does nothing by half measures. They had massive oak trees culled from their Vermont property, coopered into heavily-charred barrels, then used them to finish batches of mature 100% rye. Rated 97 points by Wine Enthusiast in the USA, this remarkably complex Rye leads with caramel and vanilla, then reverberates with rounded dry fruit, sherry and almond, fading into a long, gentle baking spice finish. Peppery hot and oakily sweet, with a big juicy butterscotch kiss.

Jade C.F. Berger V.S. 1898 Absinthe

The distillery of C.F. Berger was founded in Couvet, Switzerland in 1823, with their most famous absinthe being the C.F. Berger 65º degree absinthe verte, which earned its status as one of the premier absinthes of the 19th century. Unfortunately, absinthe crafting at the Berger distillery came to a halt with the Swiss ban of 1910, and the distillery ceased all activities in Switzerland shortly thereafter.

Enter Ted Breaux, a biochemist and researcher who grew up in New Orleans, who rose to fame when he cracked the ‘Absinth code’ in the late 1990s, employing gas chromatography to analyse an old sample of the now legendary Pernod ‘Tarragona’ and Edouard Pernod liqueurs he’d scored in a dusty estate auction.

Using proprietary analytical techniques, they painstakingly resurrected this beautiful spirit from extinction. Crafted entirely by hand using select botanicals from the original regions, and carefully distilled in ancient copper absinthe alembics. The delivery is intense, piney, woody and bittersweet followed by a juicy, sweet anise and liquorice burst.
