This Ultra-Rare hand-bottled cocktail showcases a Caol Ila 25-year single malt whisky which won Best Islay Whisky at the World Whisky Awards in 2010. It is beautifully balanced with a 30-year Pedro Ximenez Sherry, aged in American oak. The ultimate luxury twist on the Old Fashioned.

Each 88ml bottle will make one cocktail.

Caol Ila 25 Year Old Single Malt Scotch Whisky
This is the height of sophistication and elegance. It’s a dignified and complex amber gold malt that opens slightly restrained, but builds a heady bouquet of all-things Caol Ila; sooty peat, baked citrus, vanilla and that lovely mentholated, salty, maritime edge that completes the picture and keeps you coming back. You get a sense of its age late on, with some oaky tannins and sharper spice.

Twenty five years in the barrel leaves a finely woven tapestry of flavours with a drying, mineral edge. No shortage of power either; the barley sugars at mid palate burst, giving way to ash and campfire, tar, chilli chocolate and hints of hemp. Great balance and perfect poise with soft pear and guava on the nose. Close your eyes and it could be every Islay malt vatted into one by a blending maestro.

An ‘extreme’ expression of PX, having spent an average of 30 years in American oak barrels following the Criaderas and Solera system.
Wonderfully balanced with sweet raisin and prune aromas and an overall richness akin to molasses. Flavors of baked black plum and brown sugar are both juicy and rich, and then toffee and mocha take over on the finish. Sweet and thick for sure, but with discernible fruit and vitality.
