This Ultra-Rare hand-bottled cocktail showcases the most prized rum casks from Compagnie des Indies, containing a rare vintage 46-year Guadeloupean rum (distilled in 1973, bottled in 2019). 8/8 Cocktails was able to purchase the last known available bottle in Australia and possibly across the globe. This rum has been wonderfully balanced with a 30-year Pedro Ximenez Sherry, aged in American oak. An unparalleled cocktail experience.

Each 88ml bottle will make one cocktail.

Compagnie des Indes Kaiman Rum
Compagnie des Indies wanted to showcase their blending skills with a very special limited edition of 500 bottles. The concept was to marry two of the company’s most prized casks. The result combines three different components: Firstly, a Guadeloupean rum distilled in 1973, which makes up 72.2%. The second portion is a Guyanese rum made from three unusual stills; Savalle from the Diamond distillery and Enmore and Port Mourant from Uitvlugt distillery. A Jamaican portion of pot still rum in the Wedderburn style was sourced from an undisclosed distillery. Both the Guyanese and Jamaican rums were distilled in 1993. The final blend was aged in an ex-rum cask.

An ‘extreme’ expression of PX, having spent an average of 30 years in American oak barrels following the Criaderas and Solera system.
Wonderfully balanced with sweet raisin and prune aromas and an overall richness akin to molasses. Flavors of baked black plum and brown sugar are both juicy and rich, and then toffee and mocha take over on the finish. Sweet and thick for sure, but with discernible fruit and vitality.
